Margarona rice is one of many ways to use up beer that you don’t like. I like make it using “stale” beer – opened, left in the fridge, unhurt but lacking that just-opened freshness. You can alternately use your favorite beer, or make this rice to get rid of a tart IPA you can’t stand to drink.
The amount of beer you need is not an exact science. If you have a partial can, you’ll use a bit more water; a full can, and you’ll use a bit less.
Our version of the recipe is dairy-free, using plant-based butter. You can use real butter or even olive oil if you prefer. Adding butter or oil improves the texture and mouth feel of the dish.

Margarona Rice
Ingredients
- 1 cup uncooked rice
- 1 bottle or can beer
- water
- salt to taste
- 2 tbsp plant-based butter
- 2 tbsp lime juice
- tajin seasoning (for topping)
Instructions
- Prepare rice according to package instructions, substituting some of the water for equal amounts of beer. For example, if two cups of water are required, pour the beer into the measuring cup, then add water to reach the full liquid amount.
- Add salt, butter, and lime juice to prepared rice. Stir to combine.
- Top with tajin and additional salt to taste.
