When you take up a vegetarian, vegan, or dairy-free diet, giving up your favorite fast food treats can be the hardest part.
Move over, Taco Bell. We’ve got a dairy-free quesadilla that’s nutrient-dense and delicious.
Dairy-Free Quesadilla Recipe
Servings: 2
Prep time: 10 minutes
Ingredients:
2 whole wheat tortillas
1 pepper (bell or jalapeño)
1 small can mushroom pieces
1 tbsp olive oil
1/4 cup vegan cheese
2 tbsp hummus
1/2 cup fresh spinach
1 tbsp flax seeds
Salt to taste
Salsa (optional)
Preparation
1. Slice the peppers. Combine peppers, mushrooms, oil, and salt in a skillet. Saute.
2. Heat another skillet on medium heat.
3. Smear 1 tbsp hummus on one half of the face of a tortilla. Place the tortilla on the heated skillet.
4. Sprinkle the tortilla with one half of the dairy-free vegan cheese, vegetables, and flaxseed. Heat until the bottom begins to brown. Remove to a plate and fold in half. Cut with a pizza cutter.
5. Repeat steps 3 and 4 to create the second quesadilla.
6. Enjoy with your favorite salsa or taco sauce.
